Angel Hair Pasta




this is one of my favorite pastas to make. It has a light authentic flavor that I just can't get enough of. Plus it makes my kitchen smell like garlic heaven, and who doesn't love that?


Ingredients:

1lb. angel hair pasta
2 cloves garlic
1 Tab. olive oil 
1 medium red onion
1-2 Tab. basil chopped
salt and pepper to taste
1-2 cups chicken or vegetable broth
1-2 cups white wine
1 cup milk
35-40 cherry tomatoes (blanched)
1 cup of fresh baby spinach
parmesan shavings to taste


Directions:

heat your olive oil in a pot over medium high heat
add your garlic and simmer about 30 seconds
chop your onion and simmer with oil and garlic until soft (about 3 minutes)
add the chicken broth, wine, basil and tomatoes and simmer for 10-15 minutes
add your milk and bring it back to a simmer
salt and pepper to taste
pour sauce over your angel hair pasta
toss together with fresh spinach and parmesan shavings

I served it with a whole grain rustic bread with seasoned olive oil to dip.
