Red Velvet Cupcakes/Cream Cheese Frosting



If you're searching for the best red velvet cupcake recipe ever - you've found it!
Don't judge this recipe because it uses a red velvet cake mix.
It's really the only way to go when making red velvet cake at home.
Otherwise you have to use a lot of red food coloring, which imparts a bad flavor to the cupcakes.
These cupcakes are incredibly moist, with that light chocolate flavor everyone loves about red velvet!


 red velvet cupcakes

ingredients:

4 eggs, beaten
1/2 cup milk
1/2 cup oil
1/2 cup sour cream
1 tablespoon vanilla
1 red velvet cake mix
1/2 4 oz. package of instant chocolate pudding mix
1/4 cocoa powder

directions:

Mix together the eggs, milk, oil, sour cream, and vanilla on medium until fully incorporated. Add the cake mix and pudding mix and mix until smooth. Fold in the cocoa powder until just blended. Scoop into lined muffin tin using an ice cream scoop. Bake on 325 for 15-25 min... How long you bake them depends on your oven just watch them.  When you press them they will bounce back if they are done.


cream cheese frosting

ingredients:

4 ounces unsalted butter, softened
4 ounces cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla extract


directions:

In a large bowl, beat together the butter and cream cheese with an electric mixer. With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy. Beat in the vanilla extract. Frost the fully cooled cupcakes or cake as desired.
