Quinoa with Roasted Sesame Seeds and Spinach




I love quinoa! It's such a delicious, healthy substitute for rice. Don't be intimidated, it's very simple to make. You'll be addicted in no time. It's vitamin packed and an excellent source of protein (a good substitute for meat).

Ingredients: (serves 2)

1 cup rinsed quinoa
1/3 cup roasted sesame seeds
salt to taste
2 cups fat free, low sodium chicken broth
2 handfuls fresh baby spinach


Directions: 

rinse your dry quinoa and place it in a pan with the chicken broth
lightly salt the mixture
bring to a boil over medium high heat
immediately cover the pan and bring it down to a simmer
let it simmer, covered for 15 minutes
remove from heat and set aside
place sesame seeds in a frying pan
over medium heat toast until the are browned on both sides
stir together your seeds, quinoa, and spinach 
serve immediately
